I've activated the DKIM DNS records and this has successfully removed the trailing " via amazonses.com" in the sender address (as displayed in Gmail). Is there any means of hiding the "mailed by amazonses.com" info that comes in the delivery details?

I think the second sentence refers to the Gmail sender details. I have also configured DKIM and now the "via amazonses.com" has been removed, but if you press in Gmail at the sender details, you can see a "sent by amazonses.com".

You can set your own domain for 'mailed-by' and 'signed-by' in Gmail by setting up a 'MAIL FROM' domain with Amazon SES, see Amazon's docs on how to set this up → http://docs.aws.amazon.com/ses/latest/DeveloperGuide/mail-from-set.html
