I have a need to pre-configure some settings in Sendy, but am unable to do so because I have not yet transferred to the new domain (I still need the old one to work because SES has not verified my new domain yet). Is there a way to accomplish this?

There's no need to change your licensed domain if you are just managing emails in your Amazon SES console.
Sendy's licensed domain only applies to which domain you install Sendy on.
