So I have sendy installed, Brand is set up.. AWS (SES and SNS) is set and 'verified' on domain and sending email. Everything is set, but when I type a letter and 'test' send it, nothing appears. Likewise, using the signup form I created (just name and email), the opt in email is not sent. Not even sure where to begin looking to solve this.

The issue was - you do not have production access. You need to request for production access.
See step 6, point 5 on our get started guide.
Ah! Stupid me. I already requested access so guess that part hasn't cleared yet. THanks Ben. I'll keep an eye out.
