I'm using Sequel Pro too, can you change the encoding of the name field back to nothing?
I added the name Hänni to my installation and it shows up as Hänni:
in UTF8 Encoding in subscribers

I just did a test by adding a name/email into one of my list and it's showing up correctly though:

These are just warnings, won't affect functionality of the app. Have you turned display_errors off in php.ini?

But, we'll change the currency symbol displayed when you edit a brand to the one you've selected as your PayPal currency. This will be coming in the next update. Thanks for the feedback!

When you set your currency in Settings, it is meant to be the currency you want to receive payment in.
