In the list settings, set the 'unsubscribe settings' to 'Only this list' in the list you're importing into, then Sendy will ignore the fact that the same email address has been 'unsubscribed' from another list.

You can update subscribers' data by clicking on their name or email in the list, a modal window will open. Then click on anything you want to edit, eg. name, email or any custom fields you've previously setup for the list.
